Recipe: Tropical Fresh Fruit Salad

Fresh fruits are abundant during the Summer months and we often buy so much that they end up rotting in the fridge! Thankfully, that happens rarely in my house where we enjoy eating fresh fruits daily.

Fruit salads can showcase any and all fruits in season. This recipe puts a tropical spin to a classic summer treat. The best part is, you can use whatever you have in the fridge!

 

Ingredients:
  • 2 cups of strawberries - halves
  • 1 cup of green grapes - halves
  • 1/2 cup bluberries
  • 1/3 cup of coconut milk
  • 2 TBL condensed milk
Instructions:

TOSS AND ENJOY! Try adding fresh peaches, apricots, apples and melons, then garnish with a mint leaf for larger gatherings.

*Tip: When fruits are starting to turn, freeze them on a sheet pan then transfer in a zip locked bag and store in the freezer for up to 6 months. Use for smoothies or as "ice" in juice, punch and even sangria.
