Mediterranean Turkey Meatballs

My kids (and my husband) LOVE meatballs! What’s great about meatballs is you can change up the flavors from classic Italian, to Indian, Teriyaki or what this recipe, Mediterranean style.

This recipe calls for 2 lbs of ground turkey, maybe too much for one night’s sitting, but I make extra to freeze because Lord knows, there will be a time where I absolutely do not have time to make dinner. In those cases, I can simply take out my meatballs from the freezer and throw it a Greek style soup, or microwave it and put it over a bed of rice.

This is also great as a sandwich in pita with tzatziki sauce, thinly sliced cucumbers, red onions, tomatoes and lettuce. Oooh, my mouth is watering already!

Ingredients:
  • 2 lbs of ground turkey
  • 1 bunch of parsley – roughly chopped
  • 2 tsp ground cumen
  • 2 tsp paprika
  • 1/2 TBL Kosher salt
  • 2 tsp red pepper flakes
  • 6 oz crumbled Feta cheese
  • 1/2 cup plain bread crumbs
  • 4 TBL olive oil
Instructions:

Gently mix all the ingredients together with your hands.

Form in balls and fry on medium-high heat with olive oil.
