Creamed spinach is not only a steakhouse staple, but also a wonderful side dish for any holiday meal.
This uses a slight twist, adding collard greens into the mix. It’s unexpected, yet still equally delicious.
Ingredients
4 TBL of olive oil
1 Spanish onion – diced
3 cloves of garlic – diced
2 TBL of whole wheat flour
10 oz of frozen spinach – thawed and drained
3 cups of fresh collard greens – chopped
10 oz of organic heavy whipping cream
1/4 tsp of ground nutmeg
2 tsp of kosher salt
fresh ground black pepper
1/3 cup of grated Parmesan cheese
Instructions
Heat a large skillet with 2 tablespoons olive oil on medium heat.
Saute the onions and garlic on medium-low until onions have softened and have started to caramelize. Add the whole wheat flour and saute for about 2-3 minutes.
Add the chopped collard greens and thawed spinach. Toss with onions, and add another 2 tablespoons of olive oil as the flour will absorb the oil. Saute together for about 5 minutes.
After the greens have heated through, slowly add the heavy whipping cream. Scrape all the bits from the pan and turn the heat down to medium-low. Simmer for about 5 minutes.
Add the nutmeg, salt and pepper. Taste for seasoning and adjust accordingly. Add the grated Parmesan cheese and turn the heat off.
