Creamy Beef & Sweet Potato Casserole

Fall and winter weather is perfect for casserole recipes. Casseroles are great recipes for busy families as it's a filling meal in one baking dish.

This recipe takes the same old ground beef that you hunted earlier in the year with your deer hunting rifle, and makes it creamy with the addition of a little sour cream and half & half. The addition of sweet potatoes is a nice surprise that makes it hearty and of course, adds a little sweetness!

This is great meal that is inexpensive and delicious!

Ingredients:
  • 1 tablespoon of olive oil
  • 2 Spanish onions – roughly sliced
  • 2 cloves of garlic – roughly minced
  • 1 teaspoon of Italian seasoning
  • 1.5 lbs of ground beef
  • 1.5 teaspoons Kosher salt
  • 1/4 teaspoon of red pepper flakes
  • 2 teaspoons of smoked paprika
  • 1/4 cup sour cream
  • 1/4 cup half & half
  • 2 large sweet potatoes – peeled and sliced
  • 1 cup of shredded mozzarella cheese
Instructions:

Heat a large saute pan on medium heat with olive oil. Saute the sliced onions and garlic with Italian seasoning until onions have softened about 5-8 minutes.

Add the ground beef and saute. Add the salt, pepper flakes and smoked paprika. Saute until the liquid has evaporated. Add the sour cream and half & half and gently stir.

Turn off the heat.

Preheat oven to 375 degrees. In a separate frying pan, take the sliced sweet potatoes and brown in the pan, just until softened. Drain on paper towels.

Take a shallow baking dish and place half of the creamy ground beef on the bottom of the pan. Add a layer of the sweet potatoes on top of the beef. Add the remaining of the creamy ground beef and top with the rest of the browned sweet potatoes.

Top with shredded mozzarella cheese and bake in the oven for about 30 minutes, until the cheese has melted and browned.
