Pizza Roll Ups

Store bought puff pastry has many different uses. These days, you can even by organic pre-made puff pastry that has no chemicals and preservatives and will taste just like you made it fresh!

On this day, my husband and I are packing the kids in the car to hang with some family for a birthday party.

Drives with the children can become very dangerous, as they get hypnotized by the gleaming fast food lights as we drive passed to our destination. And, you all know that kids can get hungry in the oddest of times, never all at the same time.

To help us stay away from this problem, I will often bring snacks into the car. (The clean-up is a whole other story!) This helps with curbing their hunger, keep our costs down, and help us to stay away from the fast-food joints.

This pizza roll ups recipe can also be great for school lunches, after-school snacks, and even  dinner, if served with a nice side-salad. These pizza roll-ups can even get fancy, as the puff pastry is essentially a blank canvas.

Try rolling up smoked gouda, caramelized thinly-sliced pears and fresh arugula; or spinach artichoke spread, proscuitto and sundried tomatoes. The possibilities are endless! 

Ingredients:
  • 1 sheet of store-bought puff pastry
  • 1/3 cup of marinara sauce (homemade or organic store-bought)
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup shredded Parmesan cheese
  • 1 tablespoon fresh basil – julienned
  • Pepperoni or Capicola Ham slices
  • 1 tsp olive oil
  • 1 tsp fresh oregano – chopped
Instructions:

Heat the oven to 350 degrees.

Line a cookie sheet with parchment paper or foil. Unroll the puff pastry and gently stretch out the edges.

Take the marinara sauce and spread it on all corners of the dough with a spatula. Sprinkle the mozzarella and Parmesan cheese. Add the shredded/julienned basil. Add the pepperoni or Capicola ham (only one layer).

Roll the pastry tightly, and brush it with the olive oil. Sprinkle some more Parmesan cheese and chopped oregano.

Bake in the oven for about 25 minutes; until golden brown. Let cool for about 15 minutes before slicing with a serrated knife.

Notes

Make sure you roll it up tightly!
