Sticky Honey-Chai Baked Wings

Chicken wings are always a favorite in my house and a favorite of many, especially when coming together for game day.

This recipe takes typical and predictable chicken wings to a whole other level by marinating it in chai tea and seasoning it with cumen, nutmeg, ginger, cinnamon and a hefty coating of local wild-flower honey.

Try it for the your next game day get-together or even a weeknight for dinner with the kids, served with steamed Asian vegetables.

Ingredients:
  • 1.5 lbs of chicken wings or 8 pieces
  • 1 cup of hot water
  • 3 bags of chai tea
  • 1 tablespoon of Kosher salt
  • 1/2 teaspoon of ground cumen
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground ginger
  • 1/4 teaspoon of ground pepper
  • 1 tablespoon of canola oil
  • 1/4 cup of wild-flower honey – or any honey
Instructions:

Heat the oven to 450 degrees. Take the hot water and steep the 3 bags of tea. Let it cool.

Take the chicken wings and pour the tea over it, marinating for at least 30 minutes.

After 30 minutes, pat the chicken dry on paper towels. Take a large mixing bowl, and toss the chicken with all the ground seasonings, salt and pepper with the honey and canola oil.

Let the chicken on a lined cookie sheet and bake in the oven at 450 degrees for about 30 minutes, until the wings have caramelized and the skin is crispy.

Notes

Great with all parts of the chicken. With chicken breasts, use bone-in, skin on breasts to keep it moist at the high temperature.
