When it is cold and dreary outside and I have my little ones cooped up inside, there is nothing more fun than whipping up some fun and easy gluten free muffins!

Perfect for a snack or breakfast on the go, these are gluten & dairy free, packed with energy, omega 3′s & protein!

Gluten Free Banana Flax Muffins

Ingredients

6 eggs (whole)

1/2 cup coconut flour

1 cup coconut oil

2 cups raw flax seeds

2 whole bananas (the riper, the better)

2 tsp vanilla

3 tbs raw honey

pinch of sea salt

pinch of cinnamon

1tsp baking soda

1/2 cup or more chocolate chips

Instructions

Mix it all together ( I always mix by hand)

Bake at 350 degrees for 10-12 minutes until golden brown in a greased muffin pan (I like to use coconut oil).

Cool and sprinkle (optional) with granulated sugar.

Notes

Optional: 1/2 cup of ground almonds or walnuts
1/2 cup of gluten free oats
