Gluten Free Banana Flax Muffins

When it is cold and dreary outside and I have my little ones cooped up inside, there is nothing more fun than whipping up some fun and easy gluten free muffins!

Perfect for a snack or breakfast on the go, these are gluten & dairy free, packed with energy, omega 3's & protein!

Ingredients:
  • 6 eggs (whole)
  • 1/2 cup coconut flour
  • 1 cup coconut oil
  • 2 cups raw flax seeds
  • 2 whole bananas (the riper, the better)
  • 2 tsp vanilla
  • 3 tbs raw honey
  • pinch of sea salt
  • pinch of cinnamon
  • 1tsp baking soda
  • 1/2 cup or more chocolate chips
Instructions:

Mix it all together ( I always mix by hand)

Bake at 350 degrees for 10-12 minutes until golden brown in a greased muffin pan (I like to use coconut oil).

Cool and sprinkle (optional) with granulated sugar.

Notes

Optional: 1/2 cup of ground almonds or walnuts
1/2 cup of gluten free oats
