Apple Gouda Panini

I love, love, love panini's. Panini's are a classic Italian way to make a hot sandwich. Anything from a simple proscuitto and cheese panini, to a dessert-style hazelnut spread and banana panini, the possibilities are endless.

Panini makers are hot on the market, but if you don't have one of your own, or simple don't find the need for one, be like me and make your panini in a non-stick frying pan; weighing it down with another pan!

This recipe for Apple Gouda Panini is an elegant panini, perfect with a glass of cold sparkling or sweet wine. This also shows that "elegant" doesn't have to be expensive or out of the norm. The ingredients are simple, gouda cheese, slices of a firm and tart apple (I used Pinata apples), and arugula.

Ingredients:
  • 1 whole apple (Gala, Pink Lady, Pinata, or Macintosh) – cored and sliced
  • 2 slices of Gouda cheese
  • Handful of fresh Arugula
  • Unsalted butter
  • 6 slices French bread
Instructions:

Heat a panini grill to medium-high.

Per sandwich, take one slice of Gouda cheese, top with 2 slices of apple, a handful of fresh Arugula, the second slice of Gouda and sliced French bread.

Butter the outer sides of the bread and grill until golden brown and the cheese has melted.
