One of my most favorite Asian foods is from Thailand — Pad Thai. Wide and silky rice noodles loaded with vegetables and chicken is heightened by the crunch of roughly-chopped peanuts and the tang of a fresh lime. Usually made with a little tamarind paste and fish sauce, I made this recipe with more readily available ingredients from the local market. And the taste is pretty darn yummy!
If you can’t find wide rice noodles, feel free to substitute regular Italian pasta. I suggest using fettucine or linguine noodles. It’s not authentic, but it’ll get the job done!
