Greek Yogurt Chicken Salad

I love me a good chicken salad sandwich! The creaminess of the mayonnaise juxtaposed with the crunchy nuts and then sweetness of the grapes, as well as all the different textures makes for a delicious party in my mouth!

The problem with chicken salad is that it's heavy laden with fattening mayonnaise. Although I do LOVE my mayo (I even dip my french fries in them!), it's not the best for you, especially when you're watching your diet.

This recipe for Greek Yogurt Chicken Salad still has a couple tablespoons of mayo, but substitutes the rest with thick and creamy Greek yogurt.

What you get is the familiar creamy chicken salad but a lot lighter and better for you. Try this recipe!                                                                 
Ingredients:
  • 2 cups of diced chicken breast (I used rotisserie chicken)
  • 1/4 cup slivered almonds
  • 1/4 cup red onions – diced
  • 2 teaspoons for fresh Tarragon – chopped
  • 1/2 cup of green grapes – halved
  • 2 tablespoons of real mayonnaise
  • 1/4 cup of plain Greek yogurt
  • 1/2 teaspoon of Kosher salt
  • Fresh cracked pepper to taste
Instructions:

In a large mixing bowl, gently mix all the ingredients together.

Serve in a sandwich, on crackers or in a wrap, as shown.
