Paprika Baked Drumsticks
Chicken recipes are abundant and a part of weekly menus across the country.
This recipe of Paprika Baked Drumsticks takes simple pantry spices like Paprika and whips up a pretty impressive weeknight meal, that's even good enough to serve to guests. The most "exotic" item in this recipe are leeks. Which is nothing but a giant sweet scallion.
I say, the meals you serve everyday should be "great" enough for events in your home. Then, your family will sure be spoiled - but don't they deserve it?? :)
If you don't have drumsticks, feel free to substitute this recipe with chicken wings (perfect for game day), thighs and even bone-in chicken breasts!
- 2 lbs of chicken drumsticks
- 1-2 stalks of leeks – washed and sliced into rounds
- 4 red potatoes – cut into wedges
- 3-4 sprigs of fresh thyme
- 1 tablespoon of Spanish paprika
- 2 teaspoons of Kosher salt
- Fresh cracked pepper – to taste
- Olive oil
Heat the oven to 400 degrees.
In a large mixing bowl gently toss the chicken, potatoes and sliced leeks with paprika, salt, pepper, thyme and olive oil.
Spread onto a large sheet or cookie pan and cover with foil.
Bake for about 40-45 minutes. Uncover and bake for another 5-10 minutes until the chicken turns a golden brown color.
