Slow Cooker Arroz Con Pollo

Chicken and rice. It's a classic combination that transcends so many cultures. It's a simple dish, usually made with ingredients that are easy to find.

Chicken and rice recipes can be Asian, Mediterranean, Middle Eastern in flavors, just to name a few. This particular recipe is a slow cooker recipe using Mexican flavors and a staple meal in so many homes, Arroz con Pollo (Chicken with Rice).

With just a few simple pantry staple of ingredients and even fewer cooking steps, this Arroz Con Pollo recipe made in the slow cooker may be just what you need during a crazy busy week.

 

Ingredients:
  • 2 lbs of Chicken Drumsticks – (Use any parts you like)
  • 2 cups of Long Grain Rice
  • 1 can of Mexican-Style Stewed Tomatoes
  • 1.5 cups of Chicken Stock
  • 2 stalks of celery – thinly sliced
  • 1 small Spanish onion – diced
  • 2 cloves of garlic – roughly chopped
  • 2 teaspoons of Kosher salt
  • 2 teaspoons of Smoked Paprika
  • 2 teaspoons of Ground Cumen
  • 2 teaspoons of Dried Oregano
  • 1/2 teaspoon of Cayenne Pepper
  • 3 tablespoons of olive oil
Instructions:

Heat a saute pan with olive oil in medium-high heat.

Take all the spices and season the chicken. Brown in the pan until golden brown.

In a slow cooker, add the rice, canned tomatoes, celery, onions and garlic and top with chicken stock.

Add the chicken pieces as well as little of the olive oil from the pan and cook for about five hours, until the rice is tender.

Serve with chopped scallions and/or cilantro.
