Sausage Hash with Fried Egg

Tonight, like many nights, the house was busier than ever with kids playing, laughing, and quarreling all at the same time. With me sitting trying to finish up the last of my work and emails, doing my best to keep the everyone as calm as possible right before dinner, I actually had no idea what to make for dinner.

Simple dinner recipes are what so many people come to ask me for. Countless Facebook messages, emails, and tweets begs the question, "What kind of easy weeknight meal recipes can I make??"

I'd like to tell you that like so many self professed home cook extraordinaire's, I carefully plan things out every week, meticulously jotting down grocery lists items and a fanny pack full of coupons; then spending the entire weekend planning, chopping, and sorting out my meals for the week - but THAT is not me at all!!

Just like many of you...geez, millions of you even, I am busy mother of three, building my own enterprise, being a wife and hanging on to my dear social life by a thread. Dinner ideas need always be quick, as healthy as possible and delicious in my house. Now, I don't always meet these criteria, but it's what I strive to do.

Now, I may have a home court advantage in the cooking arena, since it is my passion, work and one of my life's purpose. However, I've said it before, and I'll say it again and again, that as long as you are stocked with the right ingredients, Great Everyday Meals can be a reality in your home too.

This recipe for Sausage Hash with Fried Egg was our dinner this evening. Breakfast for dinner is a theme the kids thoroughly enjoy. And the versatility of this recipe, can be taken back to breakfast and brunch, of course.

Use your favorite kind of sausage and take it out of the casing. In this case, we used a Filipino favorite, Longanisa sausage. Philippine longanisa gets it's name from it's cousin, the Spanish Longaniza and is sweet and a breakfast staple.

Ingredients:
  • 1 Tablespoon Olive Oil
  • 1 LB Mild or Hot Sausage – out of the casing
  • 2 Red Potatoes – diced
  • 1/4 Water
  • 1 Medium Spanish Onion- diced
  • 2 Cloves of Garlic – minced
  • 1 Red Bell Pepper – diced
  • 1/2 a head of Fresh Broccoli – small chopped
  • 1/2 teaspoon Kosher Salt
  • Eggs
Instructions:

Heat a large skillet on medium-high with olive oil.

Add the sausage – out of it’s casing and start to fry the sausage, and breaking it up into smaller pieces with your wooden spoon.

After a few pieces start to brown, add the potatoes and water – stirring gently and covering the pan for about 3-5 minutes, allowing the potatoes to cook.

Uncover the pan – scrape the bottom with the wooden spoon and add the onions, garlic and red bell pepper. Gently saute sausage and vegetables for about 5 minutes.

Add the broccoli and salt, and saute for another 5 minutes.

Serve with a fried egg, cooked to your liking.
