Ingredients:
  • .5 pound of Spaghetti Pasta
  • 4-5 tablespoons of Olive Oil
  • 1 medium Onion – diced
  • 3-4 cloves of Garlic – chopped
  • 2 teaspoons of Red Pepper Flakes
  • 3-4 Roma (Plum) Tomatoes – diced
  • 2 teaspoons of Kosher Salt
  • 1 tablespoon of Dried Italian Seasoning
  • 1 large, 28 oz can of Crushed Tomatoes
  • 4 oz of Goat Cheese
Instructions:

Cook the spaghetti pasta in boiling, salted water until al dente.

In a large saute pot, saute the onions, garlic, tomatoes in medium heat with olive oil.

Once the tomatoes have broken down and onions and garlic have softened, add the Italian seasoning and red pepper flakes. Saute together for another 2-3 minutes.

Pour in your crushed tomatoes and salt. Simmer for about 30 minutes on medium-low. Taste for seasoning. If the sauce is too acidic, add about one tablespoon of granulated sugar and stir.

Turn heat to low and mix in the spaghetti pasta in with the sauce and toss, incorporating the sauce with the pasta.

Plate the pasta and drizzle with a little extra virgin olive oil and crumbled goat cheese.
