Pancakes. Fluffy. Sweet. Drizzled with maple syrup. A weekend breakfast favorite

Last weekend, the kids were begging for a pancake breakfast. I searched the cupboards for my pancake mix and couldn't find any, when I thought, "I have all the ingredients I need! Why do I need a premixed box for??" Now, don't get me wrong, there are some good pre-made pancake mixes out there. Now, you can even get them organic or "all-natural".  But just like many of the recipes I like to show you, that you can easily do from scratch, this one is right there with it!

This recipe for Vanilla Ricotta Pancakes is an amazing breakfast recipe that like many of my other recipes, simple yet elegant enough for guests or a fancy brunch in your home. The ingredients are quite simple. Flour, eggs, baking powder, vanilla, sugar and ricotta cheese. The only thing I can imagine you going out of your way buying is ricotta, and if you're like me, baking powder (because I'm not a big baker). Check it out!  


Ingredients:
  • 1.5 cups of Unbleached All Purpose Flour
  • 4 eggs
  • 2 tablespoons of Sugar
  • 2 teaspoons of Vanilla Extract
  • 1 cup of milk
  • 3 tablespoons of Unsalted Butter – melted
  • 1/2 teaspoon of Salt
  • 1 teaspoon of Baking Powder
  • 1 cup of Ricotta Cheese
  • Butter – for the griddle
Instructions:

Gently mix all the ingredients together until you have the perfect consistency, and the batter is able to form a gently drizzle when you lift your whisk. (Not too runny – not too thick)

If it’s too thick, add a small splash of milk. If it’s too runny, add a small handful of flour or ricotta cheese.

Butter your griddle on medium heat, and ladle on the pancake batter. Once it starts to bubble, flip and cook the other side until golden brown.

Repeat with the rest of the batter. Continually adjust the heat if the griddle gets too hot.

Serve with your favorite syrup and toppings.
