Avocado recipes are so abundant this time of year with creative ideas that showcase this gorgeous fruit. Typical American food doesn't include avocado as part of it's landscape besides using it as a topping on salads, sandwiches, burgers and dips.

More and more people are sharing how they eat avocado and showcasing recipes from their cultural backgrounds. The most famous and most Americanized is the Mexican favorite, Guacamole recipe. One of my childhood faves is Avocado Shake, blending ice, avocados, milk and sugar into a thick and creamy delicious drink.

This recipe for Avocado Dressing only has a few simple ingredients and a fun twist on the typical dressing your friends and family normally have a chance to eat with their salads. Try it also as a dip for french fries or a spread for your sandwiches and burgers!  

Ingredients:
  • 1 cup fresh avocado, pitted and out of the skin
  • 1/3 cup Greek yogurt
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh cracked pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon grated onion
  • 2 tablespoons fresh lemon juice
Instructions:

Blend all the ingredients together until smooth.

You may have to stop the blender and scrape the sides, a couple of times until you get a smooth consistency.

Taste and adjust for seasonings, if needed.

Serve chilled.
