Sauteed Yellow Potatoes and Green Beans Recipe by Momma Cuisine

Before we know it holiday season will be among us, and entertaining guests will kick in on an all time high again. The stress of creating a fabulous meal for guests is enough to give people major anxiety!

One of the great tips I have for those who will be entertaining, and for those who love to continue to entertain throughout the year is to have an arsenal of simple, yet elegant recipes at hand.

This recipe for Sauteed Yellow Potatoes and Green Beans is just that - simple, elegant, classic and of course delicious! 


Ingredients:
  • 3-4 tablespoons olive oil
  • 1 shallot, sliced
  • 4 garlic cloves, roughly chopped
  • 5-6 small yellow potatoes, cut in quarters
  • 3 teaspoons dried Italian seasoning
  • 2 teaspoons kosher salt
  • Fresh cracked pepper
  • 1/2 pound fresh green beans
  • 1 1/2 cups low sodium chicken stock
  • Squeeze fresh lemon juice
Instructions:

Heat a large saute pan on medium heat with olive oil.

Add the shallots and garlic and gently saute until the shallots have softened. Add the quatered yellow potatoes and toss with shallots and garlic. Add the Italian seasoning, salt and pepper and saute for about 5 minutes.

Then, add the fresh green beans and toss in with the rest of the ingredients in the pan for about 1-2 minutes. Add the chicken stock, mix and let the chicken stock finish cooking the potatoes until fork tender. Some of the liquid will evaporate and the potatoes will soak up the juices.

Taste for flavor, serve on a platter and with a fresh squeeze of lemon juice right before serving.
