Ponzu has been marketed in the food scene in the past several years, bottled and sold in gourmet markets, specialty shops and international food isles in grocery stores across the nation.

It sounds like a real gourmet sauce, doesn't it? In fact, the simplest recipe for ponzu is nothing but soy sauce with a splash of citrus juice.

Citrus can be anything from calamansi, lime, lemon, orange, grapefruit, whatever floats your boat. There are more traditional (and complex) Japanese recipes for ponzu, but for home cooks, this is just as fantastic!

This recipe for Ponzu Fried Chicken recipe is a Filipino favorite that I've been eating my entire life! It's chicken simply marinated in soy sauce and lime juice, with a little splash of rice vinegar, salt and pepper.

The dark brown color the chicken gets after frying is from the umami goodness of soy sauce. Eat it with a big bowl of rice and sweet chili sauce, a side of steamed veggies and you've got a simple and delicious meal!

Ingredients:
  • 2.5-3 pounds chicken drumsticks
  • 2 cups soy sauce
  • 3/4 cups fresh lime juice
  • 1/2 cup rice wine vinegar
  • 3 teaspoons kosher salt
  • 2 teaspoons freshly cracked black pepper
  • 3 cloves of chopped garlic, roughly chopped
  • 3 cups vegetable or canola oil
  • Lime wedges
Instructions:

Take the chicken and marinate it in the soy sauce, lime juice, vinegar, garlic and spices for at least 30 minutes. 1-2 hours is best.

Heat the oil in a deep pan on medium-high heat to at least 350 degrees. Add your chicken pieces in batches so that you don’t overcrowd the pan. Fry until internal temperature is at least 165 degrees.

Place the fried chicken on a plate lined with paper towels to soak the extra grease. Serve with a bowl of hot jasmine rice, lime wedges and favorite sweet chili dipping sauce.
