Cranberry Lacquered Cornish Hens

Ingredients

4-5 cornish hens

12 oz cranberries

3/4 cup granulated sugar

1 jar apricot preserves

8 teaspoons kosher salt

4 teaspoons fresh ground pepper

2 oranges, peeled and segmented

2 ribs celery, cut in large pieces

Instructions

Heat the oven to 375 degrees.

In a sauce pot, add the cranberries, apricot jam and sugar and cook together until it turns into a sauce, on low heat for about 20-30 minutes. Taste for sweetness.

Take your hens and pat them dry with a paper towel. Season each hen, inside the cavity and outside with 2 teaspoons of salt and about 1 teaspoon of pepper. Stuff each hen with orange slices and celery.

Take the cranberry sauce and generously brush them on each bird, reserving some for basting. Put in the oven and roast for about 20-30 minutes.

Take the birds out and brush them again with the remainder of the cranberry sauce. Finish roasting the oven for about another 15-20 minutes, until the internal temperature reaches 165 degrees.

Let rest for about 5-10 minutes before serving.
