Great Everyday Meals: Turkey Leftovers, Empanadas and Fried Rice

- 3 sheets pie dough, your favorite store brand, cut into 6 circles (the size of a cereal bowl)
- 2 cups leftover turkey
- 1 cup leftover stuffing
- 1/4 cup leftover cranberry sauce
- 1/4 cup leftover gravy
- 1 egg, beaten
Heat the oven to 375 degrees. Take a cookie sheet and spray it with cooking spray.
Take your cut out pie dough and stuff each with about 2 tablespoons turkey, 1 tablespoon stuffing, 1 teaspoon cranberry sauce, 1 teaspoon gravy.
Slowly fold the dough over into a half moon and seal the edges with a edge of a fork. Repeat with all the empanadas.
Brush each empanada with beaten egg and bake in the oven for 20-25 minutes, until golden brown.
Let cool and serve.
Ingredients:
- Vegetable Oil
- 1 small onion or medium shallot, diced
- 2 cloves garlic, chopped
- 1 1/2 cups diced roasted turkey breast
- 2 cups cooked brown or fried rice
- 1 cup corn
- 2 scrambled eggs
- 1 tablespoon low sodium soy sauce
- 1 cup chopped green beans
Instructions
Heat a pan to medium heat with olive oil. Add onions and garlic and saute until onions become tender. Stir often to avoid the onions and garlic from burning.
Add the cooked roasted diced turkey and heat through. Add the cooked rice and toss with ingredients. Then, add the corn and scrambled eggs and toss.
After all has heated through, add the chopped green beans and toss with soy sauce. Heat through, taste for seasoning and serve.
