Bacon Parmesan Gnocchi

This month, I am cooking up some "fast food" recipes and showing that making fresh food doesn't have to take loads of time spent in the kitchen, nor does it mean you having to hop in the car and visit the neighborhood drive-thru window.

I love that Door to Door Organics also carries local foods and I have been ordering pasta from Vince & Sons, a local pasta maker in Chicago. On this recipe, I took gnocchi from Vince & Sons and made a super quick Bacon Parmesan Gnocchi recipe for a busy weeknight meal. My kids LOVE bacon any time of day and although I thought that the gnocchi might turn them off, they happily gave it a try and loved it! Heck! Even my dog loved it but he should probably just stick to his dog food for American bulldogs.  

This recipe would even be perfect for a gathering in your home and is just as impressive to guests!

Tip: you can also make use of your durable and affordable pasta maker to prepare healthy gnocchi at home using best ingredients for this recipe if you don't like market gnocchi.

Ingredients:
  • 12 oz Vince and Sons Gnocchi
  • 6-8 slices Smoking Goose Applewood Smoked Bacon, diced into 1 inch pieces
  • 1 small onion, diced
  • 2 garlic cloves, roughly chopped
  • 1/2 teaspoon salt
  • Fresh cracked pepper
  • 1/2 cup shredded Parmesan cheese
  • 3 tablespoons, roughly chopped fresh parsley
Instructions:

Heat salted water in a pot until boiling. Add the gnocchi and cook for about 5 minutes, or until the gnocchi’s start to boil to the top. Take the gnocchi out of the water and set aside.

In a large skillet, cook the diced bacon until crispy. Take out of the skillet and set aside on a paper towel.

Take the skillet with the bacon fat and discard the fat, leaving about 1 tablespoon left in the skillet. Heat the skillet to medium heat and add the garlic and onions. Saute until tender.

Add the gnocchi to pan and toss with onions and garlic and heat through. Add the crispy bacon pieces and toss gently. (You may need to add a tablespoon of the pasta water to loose up and scrape the bits on the bottom of the pan).

Add the salt and pepper and toss. Turn off the heat and toss in the Parmesan cheese and fresh parsley. Serve.

Thanks so much Johanna for this recipe! I used my instant pot for most of your recipe, but last minute added a tsp of lemon pepper, half a jar of Ragu Alfredo sauce,1/4 cup of Italian shredded cheese and fresh green onions. Amazing...
