Gluten Free Jalapeno Cheddar Chicken Tenders

I know of many sinfully delicious recipes where potato chips are taken and made into breading as a crust for chicken, fish and toppings for macaroni and cheese and more. This recipe for Jalapeno Cheddar Chicken Tenders is a direct copy-cat of that idea. But instead, taking Udi's Gluten Free, Jalapeno Cheddar Ancient Grain Crisps for the breading, obviously making it a gluten free option for crispy and delicious chicken tenders for you and your kids.


Gluten free eating whether you think it's a phase or not, has become more and more important to everyday consumers. Especially for those with sensitivities or harsh allergic reactions to gluten, it seems as if there is nothing in the marketplace to give them satisfaction for their cravings.

I was surprised to find that Udi's has a wide array for products just for those cravings, like the Jalapeno Cheddar Ancient Grain Crisps featured in my recipe. Although nothing will replace making food from scratch, I am not above grabbing a bag of chips.

The key is understanding your choices and making the best ones for yourself and your family. I hope you try this Great Everyday Meals recipe for chicken tenders and enjoy it with your family.     

Jalapeno Cheddar Chicken Tenders                                      
Ingredients:
  • 3/4 cup cup vegetable
  • 1 bag of Udi’s Gluten Free Jalapeno Cheddar Ancient Grains Crisps
  • 2 eggs, beaten
  • 1 lb chicken tenders, strips
  • 1 1/2 teaspoons salt
  • Fresh cracked pepper
Instructions:

Take the entire bag of crisps and put them in a food processor and pulse until it becomes the consistency of bread crumbs. Pour the breading onto a plate.

Season the chicken strips with salt and pepper. Add a little bit of the salt in the eggs as well.

Take each chicken strip and dip it in the egg mixture, then coating it with the breading. Repeat for all the chicken strips.

Heat the oil to medium-high heat. Fry the chicken strips until golden brown and cooked all the way through, or to 165 degrees.
