Broccoli and Cauliflower Cheesy Bites by Momma Cuisine

I am always looking for ways to get my kids to not only eat vegetables, but to also appreciate them. Okay, to appreciate vegetables at twelve, seven and four years  old might be a stretch, but I want vegetables to be part of their everyday meals.

Vegetable recipes are not as boring as you may think. This recipe for Broccoli and Cauliflower Cheesy Bites is a doughy concoction that is delicious as a snack on it's own, or a cool new side dish.        

         


Ingredients:
  • 1 head of broccoli
  • 1 head of cauliflower
  • 1 1/2 cups shredded cheddar cheese
  • 1 3/4 cups Panko breadcrumbs
  • 4 eggs, 2 full eggs, 2 yolks
  • 2 teaspoons kosher salt
  • fresh cracked pepper
  • 1 teaspoon garlic powder
Instructions:

Heat the oven to 375 degrees Fahrenheit.

Take the broccoli and cauliflower and cut them off the stem into florets. In a pot of boiling, salted water, cook the florets for about 5 minutes. Take them out and place them into an ice bath. Once cooled, take all the florets and dice them into smaller pieces.

In a large bowl, take the broccoli and cauliflower florets and mix them with your hands with the rest of the ingredients. Take a foil-lined cookie sheet and make balls out of the mixture, about the size of a meatball and place them on the sheet.

Bake in the oven for about 30-40 minutes until golden brown. Let rest and serve warm.
