Green Tea Coconut Pancakes

I love green tea and have been trying out recipes using green tea powder. I also really love the combination of green tea with coconut.

My first recipe using green tea powder was my Green Tea Coconut Pound Cake that took a couple tries to get right. The end result was so good and even a novice baker like myself was able to pull it off quite nicely!

This recipe for Green Tea Coconut Pancakes takes that same flavor profile into a breakfast favorite. As we dive into the Spring and Summer seasons, this recipe is perfect for brunch parties and a great way to impress your guests.

                                                              

Ingredients:
  • 1.5 cups of unbleached all purpose flour
  • 4 eggs
  • 2 tablespoons sugar
  • 2 teaspoons vanilla extract
  • 1 cup milk
  • 3 tablespoons melted unsalted butter
  • 1/2 teaspoon of salt
  • 1 teaspoon baking powder
  • 2 tablespoons green tea powder
  • 1/2 cup sweetened coconut flakes
  • Butter – for the griddle
Instructions:

Gently mix all the ingredients together in a large bowl.

If it’s too thick, add a small splash of milk. If it’s too runny, add a small handful of flour.

Butter your griddle on medium heat, and ladle on the pancake batter. Once it starts to bubble, flip and cook the other side until golden brown. Repeat with the rest of the batter.

Continually adjust the heat if the griddle gets too hot.

Top with more coconut flakes and serve with your favorite syrup and/or fresh fruit.
