Creamy Cajun Chicken Pasta

You all know how much I love store-bought rotisserie chicken. During nights that I just cannot cook a home-cooked meal from start to finish, I often hop to my local market and pick up a rotisserie chicken and pair it with steamed vegetables and white rice. The problem I have sometimes is that the family doesn't want to eat the same chicken the next day. I took the leftover rotisserie chicken and created this entirely new meal with it. This recipe for Creamy Cajun Chicken Pasta is flavorful, delicious and even perfect for get-together with your friends in your home! Enjoy!  


Ingredients:
  • 3 tablespoons olive oil
  • 1/2 cup chopped onions
  • 2 cloves garlic, chopped
  • 2 cups chopped rotisserie, roasted or grilled chicken
  • 1 teaspoon kosher salt
  • Fresh cracked pepper
  • 1 cup cream cheese
  • 2 1/2 cups whole milk, warm
  • 1 tablespoon Cajun spice mix
  • 1/2 cup sliced bell pepper
  • 1 pound cooked spaghetti
  • Chopped parsley, garnish
Instructions:

Heat a large deep skillet to medium/high heat with olive oil. Add onions and garlic and saute until translucent. Then, add the cooked chicken and toss with salt and pepper.

After the chicken has heated through, add the cream cheese and warm milk and dissolve the cream cheese with a wooden spoon. Simmer the sauce until it thickens on medium heat, stirring to avoid it sticking to the bottom of the pan. Then, add the cajun spices and stir. Add the bell peppers.

Then, add the cooked spaghetti and toss it with the cream sauce making sure it is fully coated and tossed with chicken. Taste and adjust for seasoning. This is the best time to add more cajun spices if you want it to be more spicy as well as add more salt, if desired.

Garnish with freshly chopped parsley and serve.
