Breakfast Fried Rice with Johnsonville

I am the Fried Rice Queen! I started making fried rice when I was about 7-8 years old and I tell you, you can make fried rice out of anything. This recipe for Breakfast Fried Rice puts your entire breakfast into one bite and even adding some vegetables that your kids may not necessarily eat at the breakfast table. WINNING! Ingredients:
  • 3 tablespoons vegetable oil
  • 1 package of Johnsonville Naturals, breakfast sausage links
  • 3 eggs, scrambled
  • ¼ cup diced yellow onion
  • 2 cloves garlic, rough chopped
  • 2 stalks scallions (green onions), sliced
  • 2 ½ cups cooked white rice, cooled or room temperature
  • ½ cup shredded carrots
  • 1 teaspoon kosher salt
  • Fresh cracked pepper
  • 1 tablespoon soy sauce
Instructions:

Cook your Johnsonville Naturals breakfast sausage links, let cool and chop into bite size pieces, and set aside. Also cook your scrambled eggs and set aside.

In the same pan, add the oil and heat to medium-high heat. Add the onions, scallions and garlic and saute. Leave some scallions aside for garnish. Saute until onions have softened and translucent.

Then, add the rice and toss, breaking up the pieces. After the rice has heated through, add the chopped sausage, scrambled eggs and shredded carrots. Toss in with rice. Heat all ingredients through.

Add the salt, soy sauce and fresh cracked pepper. Toss and taste for seasoning.

Garnish with fresh chopped scallions. Serve hot.
