Chili Rubbed BLT Sandwich

A BLT sandwich is another one of those classic American favorites. Readily available ingredients, easy prep and most always a delicious snack or meal.

What makes this version a little more exciting is taking thick slices applewood smoked bacon and rubbing them with a simple chili rub. Bake it in the oven and 20 minutes later, you have gourmet bacon.

This is a great recipe to impress your guests at your next brunch, or spice up a typical brown bag lunch.

Ingredients:
  • 1 lb of Applewood Smoked bacon
  • 1/3 cup of brown sugar
  • 1/3 cup of chili powder
  • 2 tsp of smoked paprika
  • Whole grain bread
  • Arugula
  • Roma Tomatoes
  • Mayonaisse
  • Avocado (optional)
Instructions:

Heat the oven to 420 degrees. In a bowl, combine the brown sugar, chili powder and paprika. Take large foiled cookie sheet, and rub each slice of bacon with the rub and place them on the sheet.

Build your sandwiches on whole grain bread and add as much or as little condiments and ingredients as you please. This recipe calls for arugula instead of typical lettuce, avocados and tomatoes.

Bake in the oven for 15-20 minutes, until crispy but not burned. The bacon will not be as crunchy as it is on a fry pan because the sugars help to soften the bacon.

*Tip: Try making your bacon in the oven instead of on the stovetop. It’s a lot less messy and the bacon doesn’t shrink as much!
