Chocolate Chip Walnut Banana Pumpkin Bread

Sometimes we don't realize we have everything we need to make great food at home. I've been eyeing the bananas on the counter for days.  Every day that passes they continue to ripen. I keep saying, I have to make banana bread! I finally did. 

I also saw a can of pumpkin puree and thought that this would a perfect combination. And I was right. This is such a rich, moist and festive cake. You've gotta try it. 



Chocolate Chip Walnut Banana Pumpkin Bread

Ingredients:
  • 2 ripe bananas, mashed
  • 1, 15 oz can pumpkin puree
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1 cap vanilla extract
  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon table salt
  • 1/2 cup chocolate chips
  • 1/2 cup walnuts
Instructions:

Heat the oven to 375 degrees,

In a mixing bowl mix together the bananas, pumpkin puree, eggs, sugar and vanilla. In a separate bowl, mix together the flour, baking soda, baking powder, cinnamon, nutmeg and salt. 

Gently fold in the dry ingredients in with the wet ingredients and with a spatula, fold the ingredients until well incorporated. 

Then, fold in the chocolate chips and walnuts. 

Take a loaf pan and liberally butter all sides and bottom. 

Pour the mixture in the loaf pan. 

Bake in the oven for 45 -50 minutes. Let cool and serve.
