Easy Italian Sausage Dirty Rice
Dirty Rice is a southern dish, most particularly popular and coming from Cajun and Creole country. My version of dirty rice uses Italian sausage, out of it's casing, instead of chopped liver and ground pork and dirty rice seasonings that you can easily find on Amazon. Other southern style rice dishes include Jambalaya and Red Beans & Rice, which have similar cooking methods to Dirty Rice. This is an Italian sausage recipe that I love!

This recipe is better with day old white rice. If you don’t have day old rice, make sure to cool your rice on a cookie sheet, uncovered so that it won’t be starchy.

Italian Sausage Dirty Rice
- 2 tablespoons Olive Oil
- 1/2 medium Red Onion – diced
- 1/2 medium Green Bell Pepper – diced
- 1 rib Celery – diced
- 2 cloves of Fresh Garlic – minced
- 1 tablespoon of Cajun Seasoning
- 1 teaspoon of Seasoned Salt
- 1 lb of Mild or Hot Italian Sausage – out of the casing
- 2.5 cups of cooked Long Grain Rice
- 2 tablespoons of Chicken Stock or Water
Heat a large non-stick saute pan to medium heat with olive oil.
Brown the sausage, breaking the pieces apart with your wooden spoon. After browning, set the sausage aside.
In the same pan, saute the onions, garlic, green bell peppers and celery until tender. Add the seasoned salt and Cajun Spice mix and saute for about 2 minutes.
Add the cooked white rice and toss together. Pour in the water and scrape the bottom of the pan of the brown bits.
Toss together until the rice is hot and serve.
