Gluten Free Flourless Chocolate Cupcakes

These are incredibly simple to make and equally decadent for those occasions when you want to satisfy your chocolate craving without any guilt!

2 cups non-dutched chocolate powder (you can find non-dutched chocolate powder at Whole Foods for a very reasonable price!  Also, non dutched is my first choice because the "dutching" process used in standard cocoa powder results in the loss of about half of the antioxidants.)  

Ingredients:
  • 1 cup raw coconut oil
  • 2 tablespoons vanilla
  • pinch sea salt
  • 1 large egg
  • 1 large egg 4 heaping tablespoons raw honey
  • Optional frosting/glaze:
  • 1/2 cup coconut oil
  • 1 tsp vanilla
  • 2 tbs raw honey
  • 1/2 cup chocolate powder
Instructions:

** If too liquidy, add more chocolate powder

** If too thick/dry add more oil

Preheat oven to 350 degrees.

Bake in greased cupcake sheet for 8-10 mins….best if taken out while still slightly raw in the middle but thoroughly cooked around the edges.

Cool!!!


Gluten Free Chocolate Glaze

Mix by hand and drizzle or spoon over the cooled cakes.

I often just dust the cakes with powdered sugar, though the glaze is positively decadent.
