Ground Beef Hash

Ground beef is another staple in my home. From it I can make meatballs, bolognese sauce, burgers and this favorite, Ground Beef Hash.
Using potatoes, corn, onions, garlic, and red bell peppers, this meal is great over fluffy white rice or short cut pasta like macaroni. What I love about this meal is that you can essentially use what's in your fridge or pantry. Have some carrots? Add them in! Green beans? Cut them up and toss it in! Some broccoli? Why not?

Using what you have readily available makes it simple. The key is to add a few key spices like paprika and believe or not a tiny splash of soy sauce! Let it cook until the liquids are evaporated and it beef gets a little crispy. 

Ingredients:
  • 3 tablespoons olive oil
  • .5 lb of ground beef
  • 1 Spanish onion – diced
  • 2 stalks celery – diced
  • 2 cloves garlic – minced
  • 1 red bell pepper – diced
  • 1 Russet potatoes – small dice
  • 1 can (14 oz) of corn (drained) or 2 fresh corn ears
  • 1.5 teaspoons Kosher salt
  • .5 teaspoons ground pepper
  • 1 teaspoon paprika
  • 1 teaspoon soy sauce
Instructions:

Heat a large saute pan on medium-high heat with olive oil.

Add the onions, celery and garlic and saute for about 5 minutes, until they have softened. Add the ground beef, gently breaking it apart. Saute for about 5-8 minutes.

Add the potatoes and red bell pepper, saute with beef and the rest of the veggies until all the liquid has evaporated. Then, add the corn.

Add the salt, pepper, paprika and soy sauce. Saute and taste for flavor. Cook until there is no more liquid and the edges of the beef have become crispy.

I’d love to start with almond flour! I just discovered the bulk bins at a nearby grocery and stood in front of them dreaming about ways to use all the nuts. Congrats on the cookbook- it’s on my must-read list!
