Remove your chicken pieces from the fridge and dry them with paper towels. Next, sprinkle them with pepper and salt.

Now, add oil to the stockpot and heat on medium to high heat. When the oil is sufficiently heated up, add the chicken in batches, making sure their skin sides face downwards. Then cook until dark golden brown. Next take chicken out of the stockpot, using the cooking spoon.

Then return chicken to the pan and add carrots, celery, thyme and bay leaves and simmer over medium heat, covered, until chicken is tender.(Note: This process should take between 25 and 30 minutes). After that, transfer chicken to a plate and also remove soup from heat.     

Now add noodles to the soup and let stand, covered, until the noodles are tender (Note: This process should take between 20 minutes or so). When chicken is cool enough to handle, remove and discard bones and then shred meat into correct-sized pieces. Next, return meat to stockpot and add lemon juice alongside parsley while stirring and cook for about five minutes or so. Finally, take the meal out of the heat and let it cool down before serving.
