Mango Coconut Baked Oatmeal

Oatmeal is a breakfast staple in many homes across America. These days, people are used to eating oatmeal out of a small package artificially flavored like Apple & Cinnamon, Peaches & Cream, Maple, etc...

This recipe for Mango Coconut Baked Oatmeal will show you how easy it is to make your own flavorful and exotic oatmeal made with fresh ingredients.

This oatmeal is so amazing that it can easily become dessert! If you desire your oatmeal to be less thick, simple add a splash of milk and stir.

Try this recipe for breakfast. This is also a great make-ahead recipe and simply keep in the fridge with a lid. Also, don't be afraid to try other variations. How about REAL peaches and cream, apple cinnamon, or strawberries...anything goes!  

                                                               

Ingredients:
  • 2 cups of rolled oats – DO NOT use quick oats
  • 1/2 cup of brown sugar
  • 1/2 teaspoon of ground ginger
  • 1/4 teaspoon of ground cinnamon
  • 1 pint of half and half
  • 1 1/4 cup of milk
  • 1 mango – pitted and diced
  • 1/4 cup of sweet shredded coconut
Instructions:

Heat the oven to 350 degrees.

In a deep dish, mix all the ingredients together.

Bake, uncovered for about 1 hour and 15 minutes. Check to make sure the oats are cooked all the way through before taking out.

Let cool and serve with a splash of milk or water.

How long can I keep, I want it for breakfast for a few days. Thanks, it sounds too easy and it especially sounds delicious.
