No Flour "Almond Joy" Mounds

I love coconut! Whether it's savory or sweet, coconut is something I will always choose to eat. Now, add some other faves like sweet morsels of semisweet chocolate and chopped almonds and you've got a sweet treat that is elegant and simple to make. 

Take these three simple ingredients and add in some sweet condensed milk and you will see just how simple this is to make at home.

No Flour "Almond Joy" Mounds

Ingredients:
  • 1 bag sweet coconut flakes
  • 2 cups semi sweet chocolate chips
  • 2 cups chopped almonds
  • 1, 14 ounce can condensed milk
  • 1 cap vanilla extract
Instructions:

Heat oven to 350 degrees. 

Take a large cookie sheet and spray with cooking spray. 

In a large bowl, gently mix all your ingredients together. With a 2 inch ice cream scoop (#24 scoop size), scoop out the coconut mixture and line them up on cookie sheet, about 4 rows of 6. 

Then, place the cookie sheet in the oven and bake for about 15 minutes, until the edges become golden brown. Let rest for at least 10 minutes then with a spatula, pick them up and release from the sheet. 

Place in an airtight container.
