Rotisserie Chicken & Squash 5 Minute Stir Fry

As kids go back to school and we all go back to find our grooves, there will be many busy nights where dinner seems impossible to get on the table. My recipe for Chicken & Squash 5 Minute Stir Fry recipe is one of my go-to's for uber crazy times. I can whip up a healthy and satisfying meal quickly and not slave away in front of the stove.Store-bought rotisserie chicken is my savior during nights like these and I often buy one, cut it up and freeze in bags. This way, over the course of a couple weeks, I easily have pre-made chicken that I can use for stir fry's, soups, salads and so much more. 




Ingredients:
  • 2 tablespoons vegetable oil
  • 1/2 cup sliced yellow onions
  • 2 cloves diced garlic
  • 1 teaspoon ground or fresh minced ginger
  • 2 cups diced or shredded rotisserie chicken
  • 2 cups quartered Patty Pan Squash
  • 1 1/2 tablespoons soy sauce
  • 1/2 teaspoon kosher salt
  • Fresh cracked pepper
Instructions:

Heat a wok or large saute pan with oil on medium-high heat. Add onions, garlic and ginger and saute until the onions have softened, about 1 minute.

Add the fully cooked rotisserie chicken and toss, heating through for about 2 minutes. Then, add the squash and soy sauce and toss for another 2 minutes.

Serve over a bed of white rice.
