Salmon & Garbanzo Saute

In a busy house with kids and their friends playing, a fridge I haven't had time to clean and organize, I was trying to figure out what to make for dinner with whatever was in the fridge. Tell me that you haven't been in this situation before!
I took salmon pieces I found at Valli Produce, one of my favorite local markets, left over garbanzo beans and some chopped veggies and whipped up a meal that was healthy and delicious.

Salmon & Garbanzo Saute
- 2 tablespoons olive oil
- 1 pound salmon pieces or 2 salmon steaks
- 1/4 cup chopped red onion
- 1/4 cup chopped sweet peppers
- 2 tablespoons chopped scallions
- 1 cup garbanzo beans
- Juice of 1 lemon
- 1/4 cup chopped parsley
- 1 teaspoon kosher salt
- Black pepper
- 1 tablespoon soy sauce
Heat a saute pan with olive oil.
Add scallions and fry. Then add salmon pieces with salt and pepper and saute. Be careful not to break the pieces too much.
Add lemon juice and parsley and saute.
Add red onions and sweet peppers.
Add 1 tablespoon of soy sauce and saute. Then add garbanzo beans. Saute and heat through.
Add more parsley and serve over pasta, rice or salad greens.
