The Most Delicious Filipino Grilled Chicken

This is one of my most favorite recipes for grilled chicken that my mom has been making before I was born!

Coming from the province of Negros Occidental and the city of Bacolod in the Philippines is Chicken Inasal. Chicken inasal is grilled chicken marinated in soy sauce and vinegar (a classic Filipino combo marinade), with achiote (annatto) to give it it's reddish, orangy tint. My mom adds ginger, lemon-lime soda, tons of garlic to complete the marinade.

My version adds Knorr Liquid Seasoning to boost the flavor and add extra layers of seasoning.

Ingredients:
  • 4-6 chicken thighs, skin on, bone-in
  • 1 cup sinamak vinegar or regular white vinegar
  • 1 cup Knorr liquid seasoning
  • 2 inches fresh ginger, sliced
  • 10 cloves garlic, roughly chopped
  • 2 tablespoons ground annatto
  • Salt and pepper to taste
  • 1/4 cup fresh lime juice
Instructions:

In a large bowl, add all the marinade ingredients and whisk,

Add the chicken and marinate for at least 30 minutes to one hour. I recommend at least 2 hours, but overnight is best. 

Grill until internal temperature is 165 degrees and cooked through.

Bacolod inasal, as far as I know, does not have knorr seasoning as well as sinamak in the marinade... sinamak is used in the dipping sauce instead.
