3 Simple School Bento Box Ideas


I had the honor to be a guest on the first week of WGN TV's brand new morning talk show, Daytime Chicago with hosts Amy Rutledge and Tonya Francisco.

With the school year starting and kids back to in-person learning, it's time to whip back up school lunches that don't suck.

Here are some of my ideas for your kids school lunches. Tell me what's worked for you!


SAUSAGE KALE FRIED RICE



Ingredients:
  • 2 tablespoons vegetable oil
  • 2 beaten eggs
  • ¼ cup chopped onion
  • Clove of garlic, chopped
  • 1/2 cup chopped sausage
  • 2 cups cooked white rice
  • 1 cup chopped kale
  • ¼ teaspoon kosher salt
  • Pinch of paprika
  • Fresh cracked pepper to taste
Instructions:

Heat skillet to medium/high heat with 1 tablespoon of vegetable oil. Add beaten egg and scramble and set aside.

In the same pan, add the other tablespoon of oil, and add onions and garlic to saute until onions are translucent and soft.

Add chopped sausage and warm through about 3-5 minutes.

Then add cooked rice. Toss until all ingredients are hot.

Add chopped kale, salt, paprika and fresh cracked pepper to taste.

Toss until kale has wilted. Taste and serve.
