Beets Salad with Basil Oil

Beets are a delicious treat, sweet and full of nutrition. This recipe is simple and elegant, dressing the salad with homemade basil oil made with organic fresh basil, olive oil and splash of lemon juice. It's so good, you'll dress everything in it!   • 1 red beet
  • 1 yellow or golden beet
  • 1/2 cup crumbled blue cheese
  • 1/4 cup pumpkin seeds (or any of your favorite nuts or seeds)
  • 1/2 pound of salad green mix
  • For the Basil Oil:
  • 1/2 cup fresh basil
  • 1/2 extra virgin olive oil
  • 1 teaspoon fresh lemon juice
  • Fresh cracked pepper

Boil the beets until fork tender in salted water. Once cooled, peel and slice.

In a blender, blend the basil, olive oil, lemon juice and fresh cracked pepper until smooth.

Assemble the salad in individual plates (like pictured), or on a large platter. Arrange the beets interchanging the red and yellow beets for presentation. Top with crumbled blue cheese and pumpkin seends and drizzle with homemade basil oil.
