Boursin Cheese & Sundried Tomato Spaghetti

Boursin Cheese is a favorite by many especially over crackers and  accompanied by thin slices of cured meats.

This recipe for Boursin Cheese & Sundried Tomato Spaghetti is a meatless recipe, using the every popular Garlic Herb Boursin Cheese in lieu of a cheese sauce. Adding broccoli and cauliflower helps to make this dish a little heartier and a little healthier!

This is a perfect weeknight meal using only a few ingredients, yet ending up with an elegant and delicious meal.

Ingredients:
  • 1/2 lb of Spaghetti
  • 1 lb package of broccoli & cauliflower florets mix
  • 3 tablespoons olive oil
  • 3 tablespoons of sliced sundried tomatoes
  • 1 package of Garlic & Fine Herbs Boursin Cheese
  • 1/2 teaspoon Kosher Salt
  • Fresh ground pepper to taste
Instructions:

Boil water with 1 tablespoon of salt and oil. Cook pasta until al dente for about 5-8 minutes. Take pasta out of the water. Do not disgard the pasta water.

Blanch the broccoli and cauliflower florets for about 2-3 minutes and take out of the water and set aside.

Heat a large saute pan on medium heat and saute the sundried tomatoes for about 1 minute. (If using sundried tomatoes packed in olive oil, feel free to use the oil in the bottle.) Toss in the cooked pasta, broccoli and cauliflower florets.

Add the entire package of Boursin Cheese and toss lightly. Add a ladle of the pasta water to help turn the cheese into a thick sauce.

Add the salt and a couple cracks of fresh ground pepper to taste.

Serve.
