Breast Cancer Awareness: Smashed Berry Mascarpone

For Breast Cancer Awareness month, I wanted to share an easy and fun, and of course pink recipe.

Mascarpone cheese is widely used in Italy in desserts and is a creamy, soft white cheese that is “sweeter”, very much similar to spreadable cream cheese.

With the addition of frozen strawberries that are gently smashed, the cheese takes on a dessert-like spread. I bought whole wheat cocktail bread to spread the cheese on for the kids. They especially like it’s tiny size, but also loved the sweetness of the mascarpone and was a great after-school snack.

I have some more left which will be used on top of pancakes for breakfast.

Feel free to use mixed berries, raspberries, blueberries…even tropical fruit. This is an awesome food remix to the typical american cream cheese. You would like this much, much better!

Ingredients:
  • 1 cup of Mascarpone cheese
  • 10 oz of frozen strawberries
  • 2 TBL of granulated sugar
Instructions:

Thaw the frozen berries.

In a mixing bowl, take the de-frosted strawberries with 2 tablespoons of sugar and smash gently with the back of your fork. You want to smash the berries, but still keeping some pieces in tack and letting out some juices.

There also may be some juices from the package, use it. Gently stir in the mascarpone cheese and incorporate with smashed berries.

Serve on cocktail wheat bread, with pound cake, pancakes or waffles or some simply toasted bread.
