Caprese Egg and Johnsonville Breakfast Sandwich
Mother's Day may be over, but this Johnsonville Sausage breakfast sandwich is good any time of day and year. Plus, you can celebrate mom and surprise her with a delicious breakfast in bed even when it's not Mother's Day!
- 1/2 cup cherry or grape tomatoes, sliced in half
- 1/2 tablespoon olive oil
- 2 eggs, beaten
- 1/4 cup fresh mozzarella balls
- Fresh basil
- 2 pre-cooked Johnsonville Sausage patties
- 2 biscuits or slider buns
- 1/4 kosher salt
- Fresh cracked pepper
Heat your skillet to medium heat with olive oil. Add your tomatoes and saute until the tomatoes have softeneed and some of their juices are in the pan.
Then, add your beaten eggs and scramble with the tomatoes. Add salt and pepper to taste.
Add your mozzarella cheese and toss with eggs and tomatoes until the cheese has started to melt. Lastly, add hand torn basil and scramble with eggs.
Take your bun or biscuit and build your sandwich with the sausage patty on the bottom and top with caprese eggs.
