Edamame Corn Salsa
Ingredients:
Instructions:
- 2 cups edamame
- 2 cups corn
- 1/2 cup chopped red onions
- 1 cup chopped Roma or cherry tomatoes
- 1/2 cup chopped cilantro
- 1/4 cup lime juice
- 2 seeded and diced jalapenos
- 1 teaspoon salt
- Fresh cracked black pepper
Heat a skillet to medium high heat. Add about 1 teaspoon of oil and the corn and cook until the corn starts to brown and "roast". Let cool.
Then put all ingredients together and let sit. Serve.
