Fast Food: Lemon Thyme Trout Fillets

Weekdays are extremely busy at my house and many times we are rushing home right at dinnertime which leaves zero time for tedious dinnertime prep or cooking. There's no way around it. Eating well takes a little bit of work. However, it doesn't mean it has to take a lot of time. Fast food takes a whole different meaning when you find and learn recipes that take as much time as it takes for you to get in your car and drive to the nearest drive thru! This recipe for Lemon Thyme Trout is a fast food recipe you'll want to cook over and over. Try the marinade with other types of fish like salmon and even shrimp. Ingredients:
  • 4 trout fillets
  • 1 1/2 teaspoons kosher salt
  • 1/2 garlic powder
  • Fresh cracked pepper
  • 2 teaspoons chopped fresh thyme
  • 1/2 cup fresh lemon juice
  • 1/4 cup olive oil
  • 1 tablespoon olive oil, for skillet
Instructions:

Take the seasonings with lemon juice and olive oil and lightly whisk together in a baking dish. Add the trout fillets and marinate in the mixture for 20 minutes.

Heat a skillet to medium heat with 1 tablespoon of olive oil. Add the trout and cook skin side down first. Once the skin starts to crisp around the edges, flip and cook the other side until golden brown. Be careful not to overcook the fish.

Place aside your favorite sides and with a lemon wedge.
