One Pot Italian Sausage Puttanesca

There is nothing like home cooking and especially during the week, dinner needs to be fast, simple to make, affordable and delicious. For under $10, I went to my local Kroger retailer to pick up a box of Barilla Angel Hair pasta and Johnsonville Mild Italian Sausage to create a quick and delicious recipe for One Pot Italian Sausage Puttanesca.


Using ingredients already in my pantry, I added tomato paste, black olives, basil, cherry tomatoes, chicken stock, onions, garlic and capers to make my version of Puttanesca. Cooking with pantry ingredients is a great way to cook for the family on a budget. Taking what you already have on hand and simply adding a couple of fresh ingredients, Barilla Pasta and Johnsonville Sausage, you can create a hearty meal that will satisfy the entire family.


Barilla Pasta and Johnsonville Sausage are staples in my home because I can create so many different meals by switching up the veggies and seasonings. Barilla is Italy's #1 pasta, so quick to make for my kids' lunch boxes, dinners and even to host guests for a dinner party! I make lasagna with Barilla at least twice a month for Sunday dinners with the family and it is always a hit. And you all know how much I love Johnsonville. Johnsonville has so many great sausage products and crumbled sausage comes perfectly seasoned and can be cooked in pastas, soups, simply tossed with veggies and more.



One Pot Italian Sausage Puttanesca

Ingredients:
  • 2 tablespoons olive oil
  • 1/2 package of Johnsonville Mild Italian Sausage Crumbles
  • 1/2 cup rough chopped Spanish onion
  • 2 cloves chopped garlic
  • 1/2 package Barilla Angel Hair pasta
  • 2 1/2 cups chicken broth
  • 1 cup halved Kalamata/black olives
  • 2 tablespoons capers
  • 1/4 cup julienned fresh basil
  • 1 1/2 cups halved cherry tomatoes
  • 2 tablespoons tomato paste
  • 1/2 teaspoon red chili flakes
  • 1/2 teaspoon kosher salt
Instructions:

Take a large skillet and heat to medium-high heat with olive oil. Add the Johnsonville Italian Sausage crumbles and cook until brown. Add onions and garlic and toss together.

Add the uncooked Barilla Angel Hair Pasta, basil, cherry tomatoes, tomato paste, olives, capers, chicken broth and seasonings. Gently stir and bring to a simmer.

While simmering, stir making sure the pasta doesn't stick to the bottom of the pan. Cover and let simmer for about 15 minutes, occasionally stirring.

Taste for seasonings. Add more broth if the sauce is too thick. Serve hot.
