Recipe: Chinese Long Beans

You may have passed by these long green strands in your local international fresh market and have wondered what they were and how to cook it.

If you love American-style green beans, then you may want to give the Chinese long beans a try! This recipe stays close to it's Asian-style sauteing the beans in lots of garlic, onions, and soy sauce. Eaten mainly as a side dish, this recipe can easily be made into a vegetarian main course when placed over a bed of fluffy steamed rice or tossed with noodles.

Ingredients:
  • 2 TBL of vegetable oil or olive oil
  • 1 medium Spanish onion – diced
  • 4 cloves of garlic – minced
  • 1 tsp of fresh ginger – grated
  • 1 bunch of Chinese Long Beans – cut off the ends and slice into 4 inch pieces (roughly)
  • 1/4 cup of water
  • 3 TBL of soy sauce
  • 1 tsp of Kosher salt
  • 1 tsp of red pepper flakes
Instructions:

Heat a wok or large skillet on medium heat with oil.

Saute the onions, garlic and grated ginger together, until the onions have softened.

Add all the long beans and water. Toss and cover, stirring occasionally for about 5-8 minutes.

Uncover and add the soy sauce, salt and red pepper flakes. Saute until the beans have softened. Taste for flavor and serve!
