I have to admit that I love my real butter and have never tried Smart Balance®. So, when I was presented with the idea of trying a cookie recipe using Smart Balance® instead of butter, I was feeling, "Eh" about it. But, being open-minded and wanting to try new things, I remembered what my dad used to always tell my siblings and I when coaxing us to try new foods, "How do you know you don't like it, if you've never even tasted it?" So, I did.
I made my favorite cookie, Shortbread. I livened this recipe up by using whole wheat flour instead of white, added chopped walnuts and apricots and used 1 tub of Smart Balance® Buttery Spread with Flax. The result was a buttery, flaky and slightychewy cookie that even my toddler was eating up!

My favorite cookie is a simple, flaky and buttery shortbread cookie.
This recipe is so simple using Smart Balance® Buttery Spread with Flax instead of butter, whole wheat flour, and chopped walnuts & apricots.
It’s a great tasting cookie that is just as flaky. The apricots give it a nice chewy texture and a healthier cookie option using whole wheat and a little addition of flax.Disclaimer: This post was sponsored by Smart Balance.
- 1 3/4 cups of whole wheat flour
- 1/2 tsp of baking soda
- 1/4 tsp of salt
- 1 cup of granulated sugar
- 1 tub of Smart Balance® Buttery Spread with Flax
- 1/2 cup of chopped walnuts
- 1/2 cup of chopped dried apricots
In a mixing bowl, sift the flour, baking soda and salt and set aside.
Preheat the oven to 350 degrees.
In a separate bowl or mixer, cream the butter and sugar together with a hand-mixer or stand mixer. Slowly add the dried ingredients in batches.
Then, add the chopped walnuts and apricots.
Scoop on a cookie sheet and gently press down with the back of a fork. Bake for 10-12 minutes. Let cool.
