{recipe & contest} Smart Balance® Cookie Spectacular

I have to admit that I love my real butter and have never tried Smart Balance®. So, when I was presented with the idea of trying a cookie recipe using Smart Balance® instead of butter, I was feeling, "Eh" about it. But, being open-minded and wanting to try new things, I remembered what my dad used to always tell my siblings and I when coaxing us to try new foods, "How do you know you don't like it, if you've never even tasted it?" So, I did.

I made my favorite cookie, Shortbread. I livened this recipe up by using whole wheat flour instead of white, added chopped walnuts and apricots and used 1 tub of Smart Balance® Buttery Spread with Flax. The result was a buttery, flaky and slightychewy cookie that even my toddler was eating up!

Smart Balance® has an array of products like buttery sticks, spreads, milk, peanut butter, eggs, cooking sprays, oils and even popcorn! Their products promote heart-healthier alternatives and even showcase gluten-free items that more and more people are wanting as additions in their pantry's.

My favorite cookie is a simple, flaky and buttery shortbread cookie.

This recipe is so simple using Smart Balance® Buttery Spread with Flax instead of butter, whole wheat flour, and chopped walnuts & apricots.

It’s a great tasting cookie that is just as flaky. The apricots give it a nice chewy texture and a healthier cookie option using whole wheat and a little addition of flax.
