Red Potato Crusted Salmon

  • 2 pounds, whole salmon fillet
  • 2 teaspoons sea salt
  • Fresh cracked pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon ground mustard
  • 2 red potatoes, sliced thinly
  • Fresh thyme sprigs
  • 3-4 tablespoons extra virgin olive oil
  • Fresh lemon juice

Heat the oven to 450 degrees.

Place wax paper on a cookie sheet and place salmon on the sheet, skin side down. Add the salt, pepper, garlic powder and ground mustard on the salmon.

Take you thinly sliced potatoes and layer them on top of the salmon. Add some extra sprinkles of salt and pepper and drizzle generously with extra virgin olive oil and thyme sprigs.

Roast in the oven for 20-30 minutes, uncovered. Let salmon rest before serving and squeeze fresh lemon juice before serving.
