Salad Stuffed Pita Sandwiches

One of the biggest questions I am asked by fans and readers is how to make lunchbox meals more creative and delicious for both working adults and school kids. We all know that salads are a healthy meal. But sometimes, another salad in the lunchbox becomes beyond boring.

And for packing salads for lunch for your kids, well, let me just say that I know that is a long-shot!Instead of another box full of lettuce and tomatoes, why not take your salads and stuff them in a pita? It makes the salad easier to eat without utensils and turns it into a salad sandwich!

A salad stuffed pita may even get your kid to indulge in a delicious, crunchy salad disguised as a sandwich. Give it a try. My husband took it to work twice last week! 



Ingredients:
  • 1 pita, slice in half
  • 2 cups of your favorite salad
Instructions:

Carefully slice the pita bread in half and open it up, being careful not to tear the pita.

Take two cups of your favorite salad and stuff each pita with one cup of salad. Do not dress until you are ready to eat to avoid the pita bread from getting soggy.
