Side Dish: Herb Roasted Potatoes & Carrots
This side dish is incredibly simple and a perfect side to any holiday main dish.
I used readily available pantry ingredients on this night. But please, try this out using fresh minced garlic, fresh parsley, rosemary, thyme and oregano and it’s just as good, if not better!
- 4 medium Russet potatoes – cut into large pieces
- 1 medium red onion – largely diced
- 3 carrots – largely chopped
- 2 tsp ground garlic
- 1 tbl Italian seasoning
- 1 tsp red pepper flakes
- 2 tsp kosher salt
- 3 tbl olive oil
Heat the oven to 420 degrees.
In a shallow baking combine all the seasonings and toss the potatoes and carrots. Roast in the oven, covered for about 1 hour.
Uncover and roast on 450 degrees for another 15 minutes.
